WATERMELON PICKLES | |
Watermelon rinds 1 c. vinegar 1 c. sugar 1/2 tsp. salt 1 tsp. pickling spices 1 qt. water Soak rinds in salt water overnight or several hours. Drain and rinse in cold water. Bring to a boil for 3-4 minutes all the above ingredients except rinds. Strain the liquid and add the rinds and cook until rinds are clear looking, about 40 minutes. |
