WATERMELON PICKLE 
7 lbs. watermelon rind
3 pts. vinegar
1 tbsp. powdered alum
4 lbs. sugar
1 tbsp. salt
1 tbsp. turmeric
1 tbsp. each cloves, pickling spices, ginger, cinnamon, and celery seed

Boil rind for 20 minutes in water with powdered alum. Rinse in cold water. Boil 20 minutes in water with turmeric. Rinse and drain well.

Boil in sugar, vinegar, and spices for 30 minutes. Put in jars and seal. Makes about 4 quarts.
