PINEAPPLE CHEESE PIE 
Unbaked crumb pie crust
1 1/2 (8 oz.) pkg. cream cheese, softened
2 eggs
1/2 c. sugar
1/2 tsp. vanilla
1 c. can crushed pineapple, undrained
1 tsp. cornstarch
1 tbsp. lemon juice

Preheat oven to 350 degrees. In small bowl with mixer on low speed, beat cheese, eggs, sugar, and vanilla until mixed. Beat at high speed until smooth. Pour into pie crust (crumb). Bake 350 minutes until set.

Heat pineapple and cornstarch over low heat, stirring constantly until thickened and clear. Stir in 1 tablespoon lemon juice. Spread on top of cooled pie.
