SQUASH CASSEROLE 
2 med. squash
1 onion
1 stick butter
1 can creamy chicken mushroom soup
1 c. sour cream
1 box Stove Top stuffing (I like beef)
2 c. grated Cheddar cheese

1. Peel squash and cut into cubes.

2. Chop onion.

3. Boil quash and onion together for 5 minutes or until squash is tender. Drain well. Set aside.

4. Melt butter.

5. Add mushroom soup and sour cream to butter; mix well.

6. Toss stuffing and spices into soup mixture.

7. Fold in squash and onion. Bake at 250 degrees for 30 minutes (covered). Add grated cheese and bake until bubbly.
