TACO CASSEROLE 
1 lb. ground chuck
1 med. onion, chopped
1 clove garlic, minced
2 c. water
1 (8 oz.) can tomato sauce
2 tbsp. chili powder
1/4 tsp. dried oregano
1 (15 oz.) can red beans (kidney or pinto)
1/2 of 1 lb. pkg. tortilla chips
1 c. shredded lettuce
1/2 c. shredded cheese
2 med. tomatoes, chopped
1/4 c. sliced green onions
1/4 c. chopped ripe olives
1 (8 oz.) carton sour cream

In skillet, brown beef, onion, garlic and drain off fat. Stir in water, tomato sauce, chili powder and oregano. Heat through. Pour half the mixture into 13"x9" baking dish. Top with half the beans and half the chips. Repeat layering. Cover and bake at 350 degrees for 30 to 35 minutes or until heated thoroughly. Top with remaining ingredients. For special treat, top with hot sauce!
