BETTI'S BROCCOLI SOUP 
1 lg. head broccoli
2 lg. cans chicken broth
3 carrots
2 onions
2 stalks celery
2 cloves garlic
3 lg. bay leaves
2 qts. half & half
1 c. potato flakes
White pepper

Wash broccoli and remove woody stem. Steam in small amount of water in very large pot. When cooked, mash in same pan, water included, if any. Add all other ingredients, except half & half and potato flakes. Mince carrots, onions, celery, and garlic before adding to broccoli, broth, and bay leaves. This part of the soup may be made ahead of time. When ready to serve, add half & half and simmer gently (do not boil). Thicken with potato flakes. This serve 25 to 30.
