SHRIMP GUMBO SALAD 
1 c. uncooked rice
1 tsp. sugar
1/2 tsp. grated lime rind
2 tbsp. lime juice
1 1/2 c. diced ham
1 c. sliced celery
1/2 c. mayonnaise or salad dressing
1/2 c. diced green pepper
12 oz. deveined shrimp (raw or frozen)
6 tbsp. French dressing
1 tbsp. parsley, chopped
1 c. halved cherry tomatoes
Lettuce

Cook rice according to directions. Place in a large bowl, stir in sugar, lime rind and juice, ham, celery and green pepper. Cook shrimp following directions, drain well. Dice and add to rice mixture.

Drizzle French dressing over mixture and toss well. Chill at least 30 minutes. Just before serving, stir in tomatoes, parsley and mayonnaise. Garnish with lettuce. Serves 8-10.
