RASPBERRY SPINACH SALAD 
2 tbsp. raspberry vinegar
2 tbsp. raspberry jam
1/3 c. veg. oil
8 c. spinach (or romaine), rinsed and torn in pieces
3/4 c. macadamia nuts, coarsely chopped
1 c. fresh raspberries
3 kiwis, peeled and sliced

Make dressing with first three ingredients. Toss spinach, 1/2 nuts, 1/2 kiwis and 1/2 raspberries and dressing. Top with remaining nuts, kiwis and raspberries. Can also be made with strawberry jam and strawberries.
