CORN STEW | |
4 cans white whole kernel corn 2 cans white cream style corn 1 sm. can tomato paste 2 med. to lg. onions, chopped fine Parsley 1/2 head garlic, chopped fine 1/2 green Bell pepper, chopped fine 1 ham steak (6 x 8 x 2 inches), cut in chunks or a ham bone (with some meat left on it) for seasoning 1 lg. spoon (cooking size) Crisco solid shortening Melt shortening in large black iron pot. (A chicken fryer will do.) Add tomato paste when shortening is hot. Stir constantly, being careful not to let tomato paste burn (lower fire if necessary). Add onions, parsley, garlic and bell pepper. Fry until onions are clear. Add ham and fry until tender. Add all corn and stir well. Let simmer on low fire about 90 minutes, stirring frequently. This dish is served over fluffy cooked rice. Serves a bunch! |
