TABOULEE 
2 c. crushed wheat
1 c. lentils, soaked overnight
1 c. parsley, cut up
1 bunch green onions, cut up
2 bell peppers, cut up
1 bunch fresh mint leaves
4 or 5 tomatoes
2 cucumbers
1 tsp. black pepper
Salt to taste
1/2 c. olive oil
Lemon juice to taste

Rinse wheat 2 or 3 times. Add water to cover and soak for 20 minutes or until soft. Drain water and squeeze wheat until all water is removed. Pour off water from lentils. Cut up vegetables for a salad. Add wheat, lentils and vegetables in a bowl. Add together black pepper, salt, olive oil and lemon juice. Pour over salad and mix well. Chill. Serve over crisp lettuce leaves.
