SWEDISH POTATOES | |
6 med. Irish potatoes, sm. enough to fit in deep spoon 3 tbsp. butter 2 tbsp. bread crumbs 2 tbsp. Parmesan cheese (grated) Salt Wash and peel potatoes. Put in cold water to prevent discoloration. Put 1 potato in bowl of spoon, slice it down to edge of spoon, making slice about 1/8 inch apart. Return it to cold water - do remaining potatoes. Drain. Put in buttered baking dish (cut side up). Baste with some butter and sprinkle with salt. Cook 30 minutes at 425 degrees. Sprinkle crumbs on each potato. Baste with remaining butter. Sprinkle with Parmesan cheese and bake 15 more minutes. |
