PINEAPPLE COLE SLAW 
4 c. chopped cabbage
1 c. crushed pineapple
1/4 c. green bell pepper

Dressing:

2 tbsp. plus 2 tsp. lite mayonnaise
1 tsp. Dijon mustard
1 tbsp. red wine vinegar
1 tbsp. sugar

Shred cabbage. Combine other ingredients. Pour dressing over slaw and mix well.

Better served the next day.
