PULLED MINTS 
2 c. sugar
1/2 stick butter
1 c. water
9 drops peppermint oil
Drop of food coloring, if desired

NEVER STIR. Place sugar, butter, and water over high heat with thermometer in pan until 220°F. Then reduce heat and cook to 270°F. Pour onto buttered marble slab. Add peppermint. Pull until mints are firm. Then add coloring. Pull until it will not stick together. Cut at once with buttered scissors. Leave until cool. Store in airtight container. Will freeze.
