SUGAR - FREE CAKE 
2 c. raisins
3 c. water
2 eggs (beaten)
1 c. unsweetened applesauce
3 tbsp. liquid sweetener
3/4 c. vegetable oil
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. flour
1 c. chopped nuts

Combine raisins and water and cook until water is absorbed, cool. Combine, eggs, applesauce, oil and vanilla and sweetener. Sift flour, soda, salt and spices together. Add to egg mixture. Add raisins and nuts. Pour into greased and floured Bundt pan. Bake at 350 degrees for 55 minutes to 1 hour.

This cake is good.
