FRIED SWEET PUFFS 
1/2 c. water
2 tbsp. packed brown sugar
1 egg, slightly beaten
2 tbsp. butter
2 c. all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
Vegetable oil
Sugar
Cinnamon
Honey

Heat water and brown sugar in 1 quart saucepan to boiling; boil uncovered 2 minutes. Cool; stir in egg. Cut butter into flour, baking powder, and salt until mixture resembles fine crumbs; stir in egg mixture. Turn dough onto lightly floured surface. Knead until elastic, 5 minutes. Shape dough into roll, 20 inches long. Cover and let rest 1 hour.

Heat oil (1 inch) to 365 degrees. Cut dough into 1 inch slices. Roll each slice on lightly floured surface into 5 inch circle. Fry circles, turning once, until golden brown, about 2 minutes. Drain on paper towels. Sprinkle with sugar and cinnamon or serve with honey.
