QUICK OATMEAL COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 1/2 c. flour
2 c. oatmeal

Cream shortening, sugar, eggs, and vanilla. Sift together flour, salt, and baking soda; add to creamed mixture. Add oats. For variations, add 1 cup raisins or 1 cup nuts.

Roll into small balls; place on greased cookie sheet. Flatten with fork

Bake 10-12 minutes at 350°F.

Makes about 60 cookies.
