GREEN PEPPER STEAK WATERFIELD 
2 lbs. beef, top round
2 tbsp. olive oil
1 clove garlic
2 lg. green peppers
2 lg. onions
1 can mushrooms or 1/2 sliced fresh
1/2 tsp. pepper
2 tsp. salt
1 clove garlic, minced
3/4 c. dry red wine
5 pinches curry powder
Oil

Trim meat well, cut into 1/2 inch strips. Heat 2 tablespoons oil and garlic in skillet. Add meat, brown well. Remove garlic.

Saute onions and green pepper strips in another skillet until tender. Add mushrooms, pepper, salt and minced garlic. Mix meat and vegetables and wine and cook covered for 30 minutes. Add curry powder, simmer 1 hour longer. If mixture needs more juice, add chicken or beef broth (not bouillon).
