FRESH COCONUT CAKE 
1 c. butter
2 c. sugar
4 eggs
1 tsp. baking soda
1 1/2 c. buttermilk
3 c. flour
1 tsp. vanilla flavoring
Salt to taste

Cream butter, adding 2/3 cup sugar at a time. Beat in one egg at a time. Dissolve soda in buttermilk. Add flour and buttermilk alternately to cream mixture. Mix in flavoring and salt. Beat until well mixed. Pour into three layer pans. Bake at 350 degrees until cake tests done. Frost with White Icing.

WHITE ICING:

2 c. sugar
1/4 c. light corn syrup
2/3 c. hot water
3 egg whites
3 heaping tsp. powdered sugar
1 1/2 tsp. vanilla
