PUMPKIN ROLL 
PUMPKIN ROLL:

3 eggs
1 c. sugar
2/3 c. pumpkin, canned
3/4 c. chopped nuts (opt.)
3/4 c. flour
1 tsp. baking soda
2 tsp. cinnamon

FILLING:

1 c. powdered sugar
4 tbsp. softened butter
8 oz. softened cream cheese
1 tsp. vanilla

Mix together ingredients for pumpkin roll. Grease a 10"x15" pan, cover with waxed paper and grease again and flour. Bake 15 to 20 minutes at 375 degrees. Remove from oven and immediately turn onto dry dish towel. Remove waxed paper and roll. Let set 15 minutes while you make filling. Unroll and spread with filling. Re-roll and refrigerate. Can be frozen.
