PUMPKIN TORTE 
24 graham crackers (crushed)
1/3 c. sugar
1/2 c. melted butter

Mix crumbs, sugar and butter. Press firmly into 9 x 13 inch pan.

SECOND LAYER:

2 eggs, beaten
3/4 c. sugar
1 (8 oz.) pkg. cream cheese

Mix eggs, sugar and cream cheese and spread over crust. Bake 20 minutes at 350 degrees.

THIRD LAYER:

2 c. pumpkin
3 egg yolks (reserve egg whites)
1/2 c. sugar
1/2 c. milk
1/2 tsp. salt
2 tsp. cinnamon
1 envelope Knox gelatin

Cook in double boiler until bubbling. Remove from heat and add 1 envelope Knox dissolved in 1/4 cup cold water. Cool. Beat 3 egg whites and 1/4 cup sugar. Fold into pumpkin mixture. Pour over cooled crust.

FOURTH LAYER:

1 pt. whipping cream, whipped

Add sugar to taste. Spread over top and sprinkle with chopped walnuts (optional).
