RICE & PEPPERONI CASSEROLE 
2 c. hot cooked rice
2 beaten eggs
1 c. heavy cream
3/4 c. diced Mozzarella cheese
1/4 lb. chopped pepperoni
Salt & pepper to taste

Mix all ingredients together. Pour into a greased 9" square pan. Bake at 350 degrees for 30 minutes.
