BLUEBERRY MAPLE MUFFINS 
2 eggs
1 c. sour cream
1 c. maple syrup
1 c. all purpose flour
1 tsp. baking soda
1 c. bran flakes
1 c. blueberries
1 c. chopped walnuts

Beat eggs in mixing bowl until very frothy. Blend in sour cream, maple syrup, flour, soda, bran flakes and blueberries. Spoon batter into 18 greased or paper-lined muffin cups. Sprinkle walnuts evenly over muffins.

Bake 15 minutes in a 400 degree oven. Cool for 5 minutes before removing from pan.

Yield: 1 1/2 dozen.
