CHOLESTEROL FREE POUND CAKE 
2 c. cake flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. nutmeg
1 c. polyunsaturated butter
2 c. confectioners' sugar
2 tsp. vanilla
2 cartons (1 c.) Scramblers cholesterol free eggs
1 tbsp. lemon juice
1 tbsp. skim milk

Preheat oven to 350 degrees. Combine all dry ingredients, cream butter and sugar. Beat in vanilla, add egg scramblers. Add dry ingredients with lemon juice and milk blending well after adding.

Pour in greased and floured loaf pan. Bake for 1 hour and 15 minutes until done. Cool 10 minutes in pan. Then finish on rack. Serves: 10.
