MARINATED SALAD 
1 bunch broccoli (flowerettes only)
1 red onion, diced
1 (15 oz.) can kidney beans, drained
2 med. tomatoes or,
1 lg. tomato, chopped
1 c. shredded cheddar cheese
Any Italian dressing
(Low calorie Bernsteins or Lite Good seasons is delicious)

Combine vegetables and cheese in bowl. Pour on dressing to almost cover. Marinate at least 5 to 6 hours (or overnight), stirring occasionally. This makes a delicious light meal when drained with a slotted spoon and stuffed into pita bread pockets.
