ZUCCHINI BOAT 
1 whole (12 inch long) zucchini
2 lbs. lean ground beef
1 sm. can evaporated milk
1/2 pkg. (2 oz.) soda crackers
2 extra lg. eggs
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. catsup

Split zucchini lengthwise and remove seeds. In a large bowl, mix remaining ingredients except catsup and knead with hand very thoroughly. Divide in half and form 2 logs of meat loaf. Place in zucchini boats. Press into a high rounded shape and spread with catsup liberally over top.

Wrap each boat in foil and seal. Place on cookie sheet 2 inches apart. Bake at 375 degrees for 1 hour. Cut into 4 sections and serve with fruit salad and hot bread. Serves 4.
