CREAM CHEESE CUPCAKES 
2 (8 oz.) pkgs. cream cheese, room temperature
2 eggs, room temperature
3/4 c. sugar
1 tsp. vanilla
1 tbsp. lemon juice

Mix above ingredients until light and fluffy. Foil cup cake paper

Place vanilla wafer in bottom of each cup. Fill 3/4 full. Bake at 325 degrees for 25 minutes. Cool in pan. After cool, place cherries or blueberries on top (pie filling).

This recipe makes 16 cupcakes.
