NO COOK - NO CAN PICKLES | |
16 lb. cucumbers Pickling salt 2 1/2 oz. alum 3 oz. pickling spices 5 gal. plastic container with tightly fitted lid 1 gal. vinegar 10 lbs. sugar Wash whole cucumbers - fill bucket about 1/2 full of cold water and enough salt to float an egg - add cucumbers, weight down and let set for 7 days - use plate or brick to keep cucumbers under water. Pour off salt water, rinse well and slice. Fill bucket again about 1/2 full of cold water and mix alum - add cucumbers and let set overnight. Pour off alum water. Pour vinegar over slices and let set overnight - pour off vinegar. Layer cucumber slices, sugar and spices. Continue until all sugar is used up - end with sugar on top - when sugar melts, stir well. Pickles are ready to eat - the longer they set up the better they are. |
