ENCHILADA SAUCE 
1/4 c. pure ground red chile, med. hot
2 tbsp. flour
2 lbs. lean ground meat
4 c. water
1 1/2 tsp. salt
1 tsp. garlic powder

Mix chile powder and flour together and lightly brown in oven at 300 degrees for 10 minutes. Brown meat in large heavy pan and pour off excess fat. Stir flour-chile mixture into meat. Add water and cook gently until thick. May be frozen for future use.
