CALICO BAKED BEANS 
1 lb. dry white beans
1/2 c. diced onion
1/2 c. diced red pepper
1/2 c. diced green pepper
1/2 c. diced carrot
2 c. orange juice
1 (8 oz.) can tomato sauce
1/4 c. molasses
2 tbsp. hot sauce (pepper, not Tabasco)
1/4 lb. salt pork or bacon, 1/2 inch cut

Soak beans in water overnight; strain. In new seasoned water (salt and pepper and bay leaf) bring to boil and simmer 30 minutes. Strain beans, reserving liquid (2 cups needed).

Transfer beans to 3-quart casserole dish/crock pot. Add remaining ingredients plus 2 cups liquid from beans (supplement water, chicken stock, etc. if short); mix well.
