GERMAN STOLLEN | |
1 cup milk, scalded 1/4 tsp. salt 1/4 cup sugar 1 pkg. active dry yeast 1 cup flour (plus enough to make a soft dough) 1/8 tsp. cardamon 1/3 cup sugar 1 cup butter 2 or 3 eggs grated lemon rind 1 cup golden raisins 1 cup candied fruit Scald milk and set aside to cool until lukewarm. Add salt, 1/4 cup sugar, yeast, 1 cup flour, cardamon. Beat until smooth. Cover bowl and let rise in a warm, draft free place until doubled in size. Cream together 1/3 cup sugar and 1 cup butter. Add 2 or 3 eggs, lemon rind, raisins, and candied fruit. Stir in just enough flour to make a soft dough. Knead until smooth. Divide into 2 portions and form 2 loaves. Place formed dough into 2 greased and floured loaf pans and allow to rise in a warm, draft-free place until doubled in size. Brush top of loaves with the yolk of an egg mixed with 1 or 2 tablespoons of melted butter. Bake in a preheated 375°F for 40-45 minutes. Submitted by: CM |
