ROLLO POLLO ENCHILADAS 
1 1/2 c. chopped cooked chicken
1/2 c. grated cheddar cheese
1 (3 oz.) pkg. cream cheese
2 tbsp. chopped olives
2 tbsp. chopped green onions
6 flour tortillas
1 (7 oz.) can enchilada sauce
1/4 c. water

TOPPING:

1/2 c. grated cheddar cheese
Sour cream

In a mixing bowl combine first 5 ingredients. Set aside. Spoon about 1/4 cup chicken mixture onto tortillas. Roll up and place seam-side down in an 8-inch square greased pan. Mix enchilada sauce and water. Pour over enchiladas and sprinkle with cheese. Bake in a preheated 350 degree oven for 20 minutes. Serve hot with sour cream. Makes 6 servings.
