Clean corn thoroughly and cut lengthwise 1/4 ... pour in hot grease; reduce fire to low. Cook 3/4 hour, covered. Stir occasionally. Serves 4-6.

Heat oil in saucepan, adding ... until transparent. Add bell pepper, tomatoes, corn and seasoning. Place over moderate heat, stirring frequently.

Cut corn off the cob, and scrape ... mixture often while cooking over low heat for 30 minutes. If mixture is too dry add a little milk. Will serve 4.

After husking, score down rows ... and salt. Add corn and half and half cream ... sprig of parsley, spoon Maque Choux in a ring around the rice.
