SWEET ZUCCHINI SLICES 
9 lbs. seeds, removed & cut in 1/2 inch slices
3 c. pickling lime
1 1/2 c. sugar
3 pts. vinegar
1 tsp. mace
1 tsp. ginger
1 tsp. cloves
1 tsp. salt
(Spices may be whole or ground)
May add food coloring if desired

Soak zucchini in solution of lime dissolved in 2 gallons water, for 24 hours. Drain. Soak in ice water 8 to 10 hours. CHANGE WATER EVERY HOUR. Boil sugar, vinegar and spices for 5 minutes. Pour over pickles while hot and let stand overnight.

Bring pickles and syrup to boil and simmer 1 hour or until pickles are clear. Add 1 teaspoon salt. Pack into hot sterile jars and seal. Process in boiling water bath 15 minutes.
