CAJUN POT ROAST | |
1 (3 lb.) beef bottom round roast Seasoning mix (below) 1 tbsp. salad oil 2 med. size onions 2 lg. celery stalks 1 med. sized green pepper 1 (14 1/2 to 16 oz.) can tomatoes 1 bay leaf 1 garlic clove, minced 2 (10 oz.) pkg. frozen whole baby okra; optional Trim fat from roast. Prepare seasoning mix. Rub 2 1/2 teaspoon mix evenly over roast, reserving remaining mix. Brown roast on all sides on hit salad oil over medium high heat; remove to plate. Cut onions into wedges, slice celery diagonally into 1/2 inch pieces. Cut green pepper into 1 inch pieces. In drippings in Dutch oven over medium high heat, cook onions, celery, and pepper until tender. Stir in tomatoes with liquid, bay leaf, garlic, and remaining seasoning mix. Return roast to Dutch oven; over high heat, heat to boiling. Reduce heat to low, cover and simmer 2 to 2 1/2 hours until roast is fork-tender, stirring occasionally. Add okra last 10 minutes. CAJUN SEASONING MIX FOR CAJUN POT ROAST 1 1/2 tsp. salt 1 tsp. paprika 1 tsp. dry mustard 1/2 tsp. dried thyme leaves 1/2 tsp. ground red pepper 1/2 tsp. pepper Mix in cup and use as directed in recipe. |
