SWEET POTATO CASSEROLE 
5 c. peeled, cooked and mashed sweet potatoes
1/4 c. butter
2 eggs, slightly beaten
1/3 c. milk
1/3 c. sugar
1 tsp. vanilla

Topping:

1 c. packed brown sugar
1/2 c. flour
1/3 c. butter
1 c. chopped pecans

Mash sweet potatoes with 1/4 c. butter. Let cool. (You may use canned, drained sweet potatoes instead of fresh.) Add eggs, milk, sugar, and vanilla. Mix all with potatoes masher. Put mixture into a 13 x 9 buttered pan. Combine topping ingredients, using a pastry blender to cut in butter so that topping has a streusel consistency. Put on top of potatoes mixture and cook 35-40 minutes at 350°F.
