STIR-FRY BEEF AND VEGETABLES 
For 4 servings you will need:

1 lb. lean beef (sirloin, top round or other tender, lean meat), thinly sliced across the grain
1/2 c. soy sauce
1/4 c. sherry
1 c. mild onins, thinly sliced
1 c. celery, sliced diagonally
2 c. broccoli flowerets
2 c. broccoli stems, peeled and thinly sliced
12 med. mushrooms, sliced
1/4 c. peanut or vegetable oil
2 sm. cloves garlic, minced or pressed
1 tbsp. cornstarch
1 med. tomato, peeled and diced for garnish, optional

TIPS: For easy preparation, have all ingredients prepared the day before. You can then cook the dish in the presence of your guests.
