COUSIN GERTRUDE'S RICE PUDDING 
This is a very variable pudding. It depends a lot on what you have in the house.

2 c. cooked rice
Juice and rind of 1 orange
Rind of lemons
Orange marmalade (about 1/2 c.)
Bread crumbs
Sugar
Corn oil

If you have candied fruit peel, raisins, diced fruit, canned pineapple, cut up apples or all of the above, add them too.

Mix all ingredients. Oil a round (pyrex) casserole. Fill with pudding. Top with bread crumbs and sugar. Drizzle oil over the top.

Bake at 350 degrees for about 45 minutes.
