BOILED RIB KALBI 
12 pieces ribs of beef, 4 inches long
1 tbsp. sesame oil
2 tbsp. soy sauce
2 tbsp. sugar
1 tsp. ginger
1/2 piece stone-leek
5 garlic cloves
2 tbsp. minced pine nuts
1 c. water
Water chestnuts (optional)

Wash ribs with clean water and remove fat. Tenderize by cutting and pounding with back of knife. Mix sesame oil, soy sauce, finely cut up stone-leek, garlic, sugar, ginger and water. Put 1 tablespoon sesame oil mixture on each rib. Simmer with mild heat for 3 hours in a stewpot. Top layer should be replaced with bottom layer every hour to cook evenly. Put water chestnuts on the cooked ribs as you like. Serves 4.
