PINA COLADA SHERBET 
2 c. fresh pineapple or 2 inch chunks (half of a 4 lb. pineapple)
2 c. buttermilk
1/2 c. Simple Syrup
1/3 c. sweetened flaked coconut (optional)
2 tbsp. lime juice

Place pineapple in food processor. Whirl until pureed. Add buttermilk, syrup, coconut, and lime juice. Whirl until blended.

Pour mixture into ice cream maker. Process according to manufacturer's instructions. Pack into freezer container. Freeze until firm, at least 4 hours.
