CHICKEN SORRENTO 
4 chicken breasts, skinned and boned
3 pkgs. frozen spinach, chopped
1/2 lg. lemon
1 lemon, sliced
Italian bread crumbs
Grated Italian cheese
2 eggs or equivalent in egg substitute
Grated nutmeg to taste

Mix bread crumbs and cheese in equal parts, enough to bread chicken. Dip chicken in egg and then in bread crumb mixture. Bake in greased pan at 375 degrees until done.

Cook spinach and drain. Squeeze on juice of 1/2 lemon and sprinkle with nutmeg. Stir to mix thoroughly. Put cooked chicken on to of spinach and garnish with lemon slices.
