HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
2 c. chopped bananas
1 c. nuts (optional)
1 tsp. cinnamon
1 1/2 c. vegetable oil
3 eggs
1 (8 oz.) can crushed pineapple

Sift dry ingredients together in large bowl. Add all other ingredients and stir until mixed; do not beat.

Bake in a greased and floured 10 in tube pan.

Bake at 350°F for 1 hour and 15 minutes. Cool in pan 10 minutes.

Cream Cheese Frosting:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box confectioners sugar
1 tsp. vanilla

Combine all ingredients and beat until smooth. Spread on cooled cake. Store in refrigerator.
