CHICKEN WITH ROSEMARY AND GARLIC 
1 chicken or 3 game hens cut in pieces
5 med. potatoes
Olive oil
4 lg. garlic cloves, minced
1/2 c. chicken broth
3 tbsp. sherry
2 dashes Tabasco
Juice of 1 lemon
4 lg. sprigs fresh rosemary, chopped

Brown chicken or game hens in olive oil and garlic. Remove from brown potato slices. Put chicken back in pan with potatoes. Add broth, sherry, Tabasco, lemon juice and rosemary. Simmer until done and juice has cooked down to 1/2.

You can also marinate chicken for 1 hour in oil, garlic, Tabasco, sherry and rosemary. Bake at 350 degrees for 1 hour or until foul is done. Cook down marinade to use as sauce. Roast potatoes around chicken if you wish.
