BEAN SALAD 
2 c. drained cooked red kidney beans
1/4 c. diced celery
3 chopped pickles (dill or sweet)
1 sm. onion, minced
2 hard-boiled eggs
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. mayonnaise or cultured sour cream

Mix lightly with about 1/4 cup mayonnaise or cultured sour cream. Chill thoroughly. Serve on salad greens. 6 servings.
