QUICK AND EASY LASAGNE 
9 uncooked lasagne noodles
1 (8 oz.) container cottage cheese
1 egg
1 (8 oz.) pkg. Mozzarella cheese

SAUCE:

1 lb. ground beef
1 (32 oz.) jar spaghetti sauce
1 tsp. oregano
2 bay leaves
1/2 c. tomato juice
4 oz. mushroom pieces (optional)

Make sauce first: Brown beef, pour off grease. Add spaghetti sauce, tomato juice, oregano, bay leaves and mushrooms. Simmer 10 to 15 minutes.

Preheat oven to 375 degrees. Use 2-quart Pyrex baking dish. Mix egg into cottage cheese. Layer as follows in pan: 3 uncooked noodles topped with cottage cheese, sauce and Mozzarella cheese (in that order). Repeat, topping off with 3 uncooked noodles and remaining sauce.

Bake, uncovered, for approximately 35 to 40 minutes. Remove from oven, cover with aluminum foil and let stand for at least 15 minutes. (This softens noodles and makes cutting easier.)
