SWEET POTATO CASSEROLE 
2 1/2 c. sweet potatoes
3 tbsp. butter
1/2 tsp. salt
Dash nutmeg
3 eggs, separated
2 tbsp. brown sugar
1/4 c. hot orange juice
1 c. crushed pineapple (drained)
Sm. marshmallows

Mash sweet potatoes; add butter, salt, nutmeg, sugar, egg yolks and orange juice. Beat until light and fluffy. Add pineapple. Fold in beaten egg whites. Pour into a greased 1 quart casserole dish. Bake 375 for 15 minutes. Top with marshmallows to cover and brown.
