STEAK WITH MUSHROOM STUFFING
1 sm. onion, finely chopped
2 shallots, finely chopped
2 tbsp. beef stock
1/2 lb. mushrooms, cleaned and chopped
3/4 tsp. salt
1/4 tsp. fresh ground pepper
1 tbsp. brandy
Snipped parsley
3 grinds fresh or 1/2 tsp. ground nutmeg
2 1/2 lbs. lean beef (sirloin steak, boneless)

Simmer onion and shallots in stock until tender (25 minutes). Mix onion, shallots, mushrooms, brandy, nutmeg, and salt and pepper. Trim excess fat from steak; cut pocket in steak, cutting to, but not through, opposite side and leaving 1 inch intact on each end. Fill pocket loosely with onion mixture; skewer opening with wooden picks. Broil steak 3 inches from heat 8 minutes on each side for medium-rare, 10 minutes on each side for medium. Remove wooden picks. Sprinkle steak with parsley. Slice and serve.
