SWISS ASPARAGUS CASSEROLE 
5 tbsp. butter
2 c. diagonally sliced asparagus
1 onion, sliced
1 tbsp. flour
Salt and pepper to taste
1 c. sour cream
1 c. grated Swiss cheese
1/4 c. cracker crumbs

Melt 2 tablespoons of butter in large skillet. Saute asparagus for 2- 3 minutes or barely tender. Remove and reserve.

In same skillet, saute onion in 2 tablespoons of remaining butter until soft. Stir in flour, salt and pepper. Cook for 1 minute until flour is well blended. Add sour cream and grated cheese. Cook, stirring constantly, over low heat, until cheese melts.

Spoon asparagus in casserole, top with mixture. Sprinkle with crumbs. Dot with butter. 400 degrees for 20 minutes. 4-6 servings.
