SHRIMP CREOLE SAUCE 
2 tbsp. butter
1/4 chopped onion
1 minced garlic
6 chopped green olives
1 1/2 c. canned tomatoes, or 1 lg. can
1/2 chopped green pepper
1/2 bay leaf
Pinch of thyme
1 tsp. chopped parsley
1/2 tsp. salt
Pinch of cayenne
1/4 c. chili sauce
1/2 lb. sliced fresh mushrooms

Melt 2 tablespoons butter over low heat. Add chopped onion, garlic and green olives. Cook covered about 2 minutes. Add the rest of ingredients and cook about 50 minutes. Add fresh cleaned shrimp just before serving. Pour over rice.
