BAKED RICE AND APPLES 
Cover one pound of rice with water until water is about 2 or 3 inches above the rice. Add a teaspoon of salt. Squeeze a fresh lemon over the rice for flavor and add a dab of butter. Slowly cook rice over medium heat until done. Drain.

Peel 5 or 6 apples; cut them as for pies. Butter a casserole dish, then add 1/2 of drained rice, then apples. Sprinkle this with sugar and cinnamon to taste. Add a few dabs of butter and the rest of the rice. Top this with a little more sugar and butter. Bake slowly at 325 degrees for 2 hours.
