APPLE CAKE 
3 c. apples (Wine Sap or Jonathan), peeled & diced
3 c. flour (not self-rising)
1 1/2 c. sugar
1 tsp. cinnamon
1 tsp. baking soda
3/4 c. black walnuts
1 1/2 c. oil
3 eggs
2 tsp. vanilla

Mix dry ingredients together. Add oil, eggs and vanilla, mixing well after each. Fold in apples and walnuts. Bake in 350 degree oven for 45 to 55 minutes. Frost with icing (below).

ICING:

1 (4 oz.) pkg. Philadelphia cream cheese
1 1/2 stick butter
1 1/2 c. powdered sugar
1/2 tsp. vanilla
1/4 c. black walnuts
